40 – 50 grams per kilogram of meat. Sprinkle meat with vinegar or it can be dipped. Sprinkle both sides with biltong seasoning. Lie for 2-4hrs in a tray, turning every 30 minutes. Hang to dry until a 45-55% moisture loss is obtained.
