40 ā 50 grams per kg of meat. Sprinkle meat with vinegar (or it can be dipped).Sprinkle both sides with biltong seasoning. Lie for 2-4 hours in a tray, turning every 30 minutes. Hang to dry until a 45-55% moisture loss is obtained.
